Coconut Macaroons


Coconut Macaroons are so fast and so easy to make.
And they're really good dipped in some chocolate.

Typically I don't care for almond extract, but there are two or three recipes in my collection in which I will use it.
And in those situations I think it's the right choice.


I've also made these macaroons with both varieties of coconut....the sweetened and the unsweetened.

We prefer the unsweetened variety...it seems to let all the flavors come through better and yet there is still enough sugar to satisfy my sweet tooth.

Tim's Fresh Tomato Spaghetti Sauce

Now, here's a spaghetti sauce that my husband, Tim, can actually eat.

I've recently learned that he's not the only one who has an intolerance to the preservatives that are used to can commercially prepared foods.


I love this very flavorful spaghetti sauce....it's perfect on, well, spaghetti....and pizza....and lasagna.

It freezes very well, too.

Blueberry Crumble Pie

The crust is so tender and unlike any other crust you've ever had.

At first I thought that the topping was too crunchy....if there is such a thing.....but by the next day it had mellowed out.
